1 box jumbo shells 1 package 44th Street Pulled Pork 1/2 cup water 2 cups of your favourite grated cheese – try old Cheddar or Monterey Jack Optional Garnish: sautéed onionsDirections:
Preheat oven to 350°F. Reserve ½ cup of sauce from the 44th Street Pulled Pork Bring a large pot of generously salted water to a boil. Add the jumbo shells and cook just until they are just getting soft – you want them slightly pliable but not too soft or they’ll tear when you stuff them. (If you have oven-ready shells you can skip this step!) Drain and rinse with cold water until they are cool enough to touch. Use a fork to toss together the pulled pork sauce in the package. Prepare a 9-inch by 13-inch baking pan with non-stick cooking spray. Fill shells until they are stuffed then place them, open side up, in pan. Mix reserved sauce with water and pour over the shells. Cover pan with foil and bake for 30 minutes. Remove the foil, sprinkle the cheese over the top and continue baking 15 minutes or until the cheese is bubbly.
