Brandied Mushroom Chicken Cacciatore
Start with one box of 44th Street Chicken Cacciatore, spread out in greased 13 x 9" lasagna dish.
Add sauteed mushrooms and veggies (I use green beans, but you could use green peas, or mixed frozen veggies like corn, carrots).
Drizzle with melted butter or olive oil.
Mix 1 can of cream of Mushroom soup, with 2 Tab of Brandy and 1 tsp. dried oregano, basil and parsley. I also like to add a pinch of cayenne pepper.
Sir and spoon over the dish
Wrap in foil and bake at 350 for 15 minutes or until golden, bubbly and veggies are tender.
Remove foil for last 5 minutes to brown if you wish.
Delicious served with egg noodles or mashed potatoes, garlic bread and tossed salad with a glass of chilled white wine!
